Getting a game of blackjack with one deck of cards is nearly impossible these days, but there are often 2 deck games at land-based casinos. Here is an example of why you want to play blackjack games with as few decks as possible:

Lets say I am the dealer, and you are the player. The deck we are using is made up of only 3 cards. Our deck has only one suit, say it is spades. an Ace, deuce, and jack (of spades) are all that are in our deck. I know that isn't enough cards for each of us to even play but follow along and you'll see the point.

Okay, I deal to you an ace. In our "deck" there remains 2 cards, the deuce and the jack. Of the two cards that remain in the deck what are the odds of you getting dealt the jack so that you hit a blackjack?

They are 1 in 2, because there are only 2 cards remaining. 1 card makes you an automatic winner of 150% of your bet. The other does not.  Your chances of winning automatically without facing challenge from the dealer are 50%. Pretty good odds aren't they?

You return to play a week later, only to find the game has added an extra deck into the shoe. Now we are playing with 2 decks. So the total cards in our new game of blackjack are:  2 Aces - 2 deuces - 2 jacks.

The dealer begins and you are dealt an ace. That means the deck now has: 1 Ace - 2 jacks - 2 deuces. There are 5 cards remaining in the deck. The odds of you getting dealt a jack so that you would be an automatic winner have now become...... 2 chances out of 5. In this example adding an extra deck diminished our odds of getting dealt a blackjack (when dealt an ace to start), from 50% to 40%. Of course the percentage is not as an extreme

But that is adding 1 extra deck into the shoe. Most shoes now days have 6 decks and some even use 8 decks. You can see how the odds have swiftly and sharply risen into the House favor.
